Small Kitchen Garden Surplus

There’s a simple technique many gardeners use to build up stores for the off season: When you harvest a bit more than you’ll eat at a meal, prep all of it but cook only what you’ll eat that day. Blanch and freeze the extra. Blanching a small batch of peas or beans doesn’t require a huge cook pot, so it goes quickly. In fact, if you’re steaming or boiling produce for dinner, you can start all of it at once, but remove the stuff to freeze after the correct time passes for blanching.
